Canning or Freezing
Most of our Grandmothers did not freeze their fruits and vegetables, most of them canned them. So you might not have an heirloom recipe handy about what to freeze or how long to keep them in the freezer. The reason I make this big statement is that our freezer today keep food at a much colder temperature. Many of us own a deep freezer and most of our Grandmother's freezers could not keep ice-cream frozen. I do not think I make a major leap here.
I was talking to a friend about prepping apples to can for apple pie filling.I thought about her dilemma for a while and then had a dah moment realizing I freeze my apple pies since I do not cook my apples for pie filling. i like using Granny Smiths that are a bit tart and hold their shape so nicely when baked. I cut up all the apples and then put them between double crusts or make a braided top crust if I am going to use it soon. I then bake them for an hour and they look great and taste great. I cover these pies with plastic wrap, then foil and then plastic wrap again. This way I do not have freezer burn and this is the only way I know how to cover the pies to keep the crust from drying out. If you have another way, please share it with us!
I had an apple tree in my back yard for years that had great apples for apple sauce. And I used my grandmothers recipes for apple sauce. One recipe has almond slivers in the mix of sugar and cinnamon. I admit I feel lazy this year since I did not can anything.I have been reminded that last year I over did it and have jars for another year. There will be lots given as presents.
