Summer Menu Blues
The dog days of summer have been getting me down. I do not want to spend much more time in the kitchen or at the grill. This weekend we will be entertaining at the lake and we will be in the kitchen and at the grill. I have looking on the web for new summer time recipes. I have been looking at my cookbooks for recipes. All these salads require cooking pasta or potatoes. All these salads require lots of chopping. So I am going to go back to what I always make which would be in my Summer at the Lake Cookbook if I was to write one. I will be boiling wild rice for an hour to make my favorite wild rice salad served with fresh caught salmon (the photo is on my website.) I will heating up sour dough bread to make the crust crisp and grilling some asparagus. I am thinking about going to the Dairy Queen in town for desert but I probably will make my own ice cream sandwiches from fresh baked cookies and store bought ice cream. Summer can be hard on the menu and creativity. I can not wait until it cools down and I can get back in the kitchen and do some cooking.



Growing up we didn't spend a lot of time on Nantucket or at a cabin. We didn't spend any. I was lucky enough to spend some time at friends house this summer. We did a lot of cooking. Since I didn't have memories to fall back on I hope I helped to create some new ones. When we were making dinner we always cooked a little more. An extra lobster, some extra steak, lots of extra grilled peppers. The next day for breakfast or lunch I have a lot of the food already made. I made a terrific Lobster Fratata. With a whole lobster. left over potatoes, cilantro, roasted corn in it, I will never be able to eat one from a restaurant.
